This is another recipe I found off of Pinterest. So far everything is really hit or miss, and luckily this one was a hit! (Unlike the time I tried angel cake mix with pie filling. No good.)
They’re pretty easy to make (and eat) and they involve a veggie (yay!) and cheese (double yay!). You need:
1/4 cup breadcrumbs (we use Italian flavored)
1/4 cup parmesan or mozzarella cheese
Salt and pepper
Grate/Shred the zucchini. Then, press it down on a few paper towels. In the original recipe I read it said if you skipped this step, they would turn out mushy and I have to say that there is a lot more water in zucchini than I realized. So I think it’s important.
Then just mix everything in a bowl, and scoop into a mini muffin pan. You could probably also just spoon them onto a cookie sheet if you don’t have a pan. Bake for 20 minutes at 350. They should be nice a golden brown.
