Peasant Toffee

When I was in High School my friends mom used to make some toffee that I absolutely loved. It was so good. I recently came across a recipe for it on the internet and was amazed at how easy it sounded to make. Also it only has 4 ingredients. Seriously.

You need:

·         Saltine crackers ( I used one tube)

·         1 stick of butter

·         1 cup of brown sugar

·         2 cups chocolate chips

Line a cookie sheet with aluminum foil and spray the foil with nonstick spray. Arrange the crackers on the sheet in rows so that they are touching each other. Heat oven to 350.

Combine the butter and brown sugar in a pot and bring to a boil. It’s not very much, so this won’t take long.

Pour the butter and brown sugar over the crackers. It doesn’t have to be totally even, but spread it out a bit if you need to.

Place the covered crackers in the oven for 5 minutes. Let them cool for 1 minute.

Pour the chocolate chips over the sheet of cracker/toffee and let them sit a few seconds. Spread them with a butter knife so that everything is evenly coated.

Stick them in the fridge for 30 or 40 minutes to cool. Break them up by hand and then try not to eat them all in one sitting.

These are so delicious. Gabe thought I was overreacting, but after tasting the final product, he totally agreed. The toffee goes under the cracker while baking so the cracker actually ends up sort of in the middle, and its got that whole sweet and salty thing happening. It makes me a little sad I waited for so long to make these because they are SO easy! I might make some for the neighbors/front office, etc.
