I found this pin on Pinterest for a “lazy day casserole” and I’ve made it a few times now. It is quick, easy, tastes good, and has plenty of vegetables so it’s a win-win-win-win.
- 4 sausages – I use turkey, but beef or pork works too
- 1 Bell Pepper
- 1/2 of a med. size red onion
- 2 -3 red potatos
- 1/2 pound of carrots – baby or the real thing works
- Olive Oil
- Red Wine Vinegar or Balsamic Vinegar
Chop up all of the vegetables and put them in a baking dish. The original recipe calls for chicken broth at this stage, which is good, but the last few times I’ve just used olive oil and it’s been fine.
Drizzle about a tablespoon and half, or two, on top of the veggies. Sprinkle Italian Seasoning, Salt and Pepper on top. (Garlic is good in here too, if you have some on hand)
Cover and bake the veggies at 400 for about 25 minutes. You can always add more/different veggies but you may need to bake them longer
Add the sausage, if it’s pre cooked. If you buy raw sausage you’ll need to brown it first, but the precooked sausage works great.
Sprinkle Red Wine/Balsamic Vinegar over the whole dish and place it back in the oven for 10-15 minutes, or until the sausage is heated through and the vegetables are cooked.
You can serve this with rice or quinoa, or eat it with a side salad. We usually eat as is, maybe with a little bread.
